Opening & Closing Checklists
Maintaining a clean, organized, well-stocked shop is the key to creating that positive first impression when customers walk in the door (not to mention staying ahead of local health department inspections). Keeping your staff busy during slower customer traffic times will make for more productive, engaged employees. These lists serve as examples used in our shoppes, offering a starting point for customization to suit the unique needs of other shops.

- Check weather forecast against schedule, adjust if necessary
- Water plants
- Sweep, weed and remove trash from sidewalks, alleys and backyard
- Put out signs and A-frames
- Arrange tables & chairs
- Unroll floor mats/rugs
- Uncover ice cream & cone holders
- Insert can skirts
- Turn on fudge warmer (check for water)
- Turn on dishwasher
- Wash and store ice cream lids

- Stock regular and dipped cone holders

Shift Checklist
Restock (rotate where possible)
- 6 & 12 oz. dishes
- 16 & 24 oz. cups
- 16/24 oz. dome lids
- Spoons, taster spoons and soda spoons
- Straws
- Pint lids/containers
- Quart lids/containers
- Half gallon lids/containers
- Napkins
- Candy toppings
- Syrup toppings
- Whipped cream (3 cans defrosted)
- Paper towels & toilet paper
Spot Clean
- Indoor & outdoor tables/chairs
- Floors (sweep, spot mop in winter)
- Sidewalks, alley ways and backyard
- Counters
- Dipping cabinets
- Can skirts (wash dirty ones in dishwasher)
- Walls & windows
- Bathrooms (wipe down sink, toilet, mirrors, changing table, floor)
General Tasks
- Scrape down cartons
- Add partials
- Make partials (curve of spade or lower)
- Take out trash/recycling bags 2/3 full or more (inside & outside)
Daily Closing Checklist
Complete after closing
- Put phone on base
- Bring in all A-frames
- Unplug outdoor lights
- Lock the entry doors
- Put bills into safe
- Cover ice cream and cone holders
- Stack chairs
- Roll up floor mats/rugs
- Sweep serving & dining areas
- Mop serving & dining areas
- Put topping bottles in the refridgerator
- Put dirty towels into hamper & empty cleaning solutions
Turn Off After Closing
- Hot fudge warmer

Monday Am
- Clean dishwasher
- Wash, sanitize, and restock candy topping containers
Monday PM
- Wash and sanitize all trays
- Take garbage and recycling to curb

- Clean hot fudge warmer
Tuesday PM
- Softscrub all stainless steel sinks
- Deep clean walls. Make sure to check behinid trash cans & underneath registers on customer side
- Defrost freezer 1
Wednesday AM
- Thoroughly clean dining room furniture (table posts, chair legs and undersides of tables & chairs)
Wednesday PM
- Magic erase scuff marks on walls and dipping cabinets
- Thoroughly clean inside windows and ledges
- Defrost freezer 2
Thursday AM
- Thoroughly clean patio furniture (table posts, chair legs and undersides of tables & chairs)
Thursday PM
- Wash and sanitize all trays
- Thoroughly clean all trash and recycling bins
- Defrost freezer 3
Friday AM
